In July, Fredericton welcomed RustiCo., a new concept with a menu built around its wood-fired oven. The restaurant, located in the space formerly occupied by Mexicali Rosa’s, offers paella and a variety of dishes featuring fish, pork chops and steak.

“The wood-fired pizza will make up a small part of the menu,” says Vedhas Deshmukh, RustiCo.’s head chef. “I want to use that oven for as many things as I can.”

RustiCo. has two kitchens — one with a brick oven that will bake the popular Neapolitan-style pizzas and also a regular kitchen for its other dishes. The owners plan to use the brick oven as much as possible for Mediterranean food and other authentic dishes.

Deshmukh cooked and helped develop menus at popular restaurants in Halifax such as Chives Canadian Bistro and 2 Doors Down before moving to Toronto to run Mira, a Peruvian restaurant, in its downtown core.

Now, owner Mike Babineau hopes they can replicate that success in Fredericton. “Our bread and burger buns are made here,” he says. “We’re really trying to make everything we possibly can in-house to make sure that we’re providing the freshest of ingredients.”

RustiCo. also features a small brewery that makes several beers that are served in the restaurant and sold in growlers and crowlers.
