HALIFAX — The Exchange on Hollis — a premium-casual restaurant — is set to open in early in downtown Halifax, in 2018. The restaurant will be located at street level in Southwest Properties’ MAPLE development project.
The Exchange will have over 7,800 sq. ft. of interior space and a 2,300-sq.-ft. terrace with harbour views and a full outdoor bar with fireplace. The interior will feature a fireplace, a long central bar and a mix of dining areas with soft seating.
The menu will feature globally-inspired dishes. The kitchen will feature a first for Canada — a Josper Charcoal Grill oven. The Josper is one of the hottest trends in Europe and the U.S. and allows for the flavour of a grill, but the controlled cooking environment of an oven.
