Rosalinda Mexican Restaurant to Open In Toronto’s Financial District

TORONTO — Rosalinda, a vegan Mexican restaurant, will open its doors in Toronto’s Financial District this spring. The 136-seat restaurant is spearheaded by Max Rimaldi, Jamie Cook — partners at Pizzeria Libretto — and Grant van Gameren.

“In 2004, ambiance-driven vegan restaurants were pretty sparse. We started to wonder what it would look like to create a restaurant that was, above all, a really great experience with amazing food, that just happened to be vegan,” says Rimaldi. “People can expect the same calibre of food, cocktails and service at Rosalinda as at Libretto, Bar Isabel, or Enoteca Sociale.”

Rosalinda’s menu will focus on Mexican and Baja flavours, developed in conjunction with executive chefs Kate Chomyshyn and Julio Guajardo — the culinary team behind Quetzal, a Mexican restaurant set to open in early 2018. Featured dishes include jackfruit pibil, Tijuana-style broccoli, spicy carrots in mole and Japanese eggplant marinated in salsa macha.

Along with a cocktail menu, mixologist Owen Walker has created a menu of low-alcohol drinks.
