Sweet and Smoky Baby Back Ribs with Hot Dog Caesars

2 racks baby back ribs (about 3 pounds)

Marinade
1/4 cup apple cider
2 Tbsp brown sugar
2 Tbsp lemon juice
2 Tbsp Tabasco-brand Chipotle Pepper Sauce

Rub
1 Tbsp paprika
1 Tbsp brown sugar
1 tsp salt
1 tsp garlic powder
1/2 tsp onion powder
2 Tbsp Tabasco-brand Chipotle Pepper Sauce

Directions

  1. Trim ribs.
  2. Combine apple cider, brown sugar, lemon juice and Tabasco Chipotle Sauce in medium bowl. Add ribs; turn to coat with marinade. Cover, or place mixture and ribs in large resalable bag. Refrigerate at least two hours or overnight, turning occasionally.
  3. Combine all rub ingredients in small bowl.
  4. Drain ribs; blot dry with paper towels. Spread rub mixture on both sides of ribs.
  5. Heat grill to medium-low.
  6. Grill ribs for 45 minutes covered, turning occasionally. Cut and serve

HOT DOG CAESAR

Ingredients 
Vodka
Tabasco sauce
pickle juice
mustard
Worcestershire sauce
Clamato juice
dill pickle
ketchup chips

Directions
Rim a glass with fresh lime and celery salt. Add 1 ½ oz. of vodka, ¼ to ½ tsp. Tabasco (to taste), ½ oz. pickle juice, ½ tsp. mustard, 1 tsp. Worcestershire and 5 oz. Clamato juice. Stir to mix and garnish with a sidecar of dill pickle and ketchup chips, or a mini hot dog.
