CALGARY — This year’s Terroir Symposium will unfold in Calgary on November 2 to 3, bringing together a lineup of international chefs, engaging discussions and culinary experiences.
A Día de los Muertos celebration will kick off the symposium at the opening reception taking place on November 2 at Alt Hotel East Village.
There will be a series of exclusive collaborative dinners featuring some of the world’s most celebrated chefs, including:
- Milpa: All Saints’ Day is a holiday where individuals celebrate those who have passed away with big celebrations, flowers and by visiting their graves. A sensorial dining experience featuring Gabriel Rodriguez, winner of Top Chef Mexico – Season 2 and a collective of local chef talent including Elia Herrera and Kevin Guillén (Milpa), Victor Hugo Raya (Super Amigos Mexican Street Food), Romina Romo (SAIT), and Giovanni Vazquez (El Chefe).
- EIGHT: Re-uniting for the first time since their finale performance on Netflix series, The Final Table, will be culinary legend and TV personality Mark Best collaborating with Darren MacLean in his eight-seat tasting room as they delve into the ingredients of the Canadian wilds.
- Hawthorn Dining Room & Bar: A vegan dinner featuring Bobby Cortez and a lineup of chefs, including Rupert Garcia (Hawthorn), Liana Robberecht (Trico LivingWell), Christine Beard and Katelin Lavoie (SAIT), Jason Barton-Browne (Just Bagels & Butters), and Winnie Chen (Fu’s Repair Shop).
- CHARCUT University District: An intimate dining experience in the butcher show kitchen with guest chef Kiki Aranita, as well as John Jackson and Connie DeSousa, and CHARCUT University District executive chef Jack Coatzee.
- Bar Chouette: A collaboration of Jim Meehan’s mixology expertise with chef Duncan Ly’s cuisine, as well as guest chefs May Ng (Satsuki) and Theresa Bonar (Trico LivingWell).
- EIGHT: Aromas specialist and sommelier François Chartier teams up with Darren MacLean for an intimate sensory experience at the award-winning EIGHT.
