The Butternut Tree Opens in Edmonton

EDMONTON, Alta. — The Butternut Tree, a new 58-seat restaurant, has opened its doors across from the Alberta legislature in the Ledgeview Centre, according to the Edmonton Journal.

Owned and operated by St. Albert, Alta.-born chef Scott Downey, the restaurant focuses on Canadian ingredients, such as Ocean Wise-certified rockfish from B.C.’s coast. It offers diners a chance to see their meals being prepared in the wall-to-wall glass kitchen with open doorways.

Chef Downey studied culinary arts at New York’s Culinary Institute of America and has subsequently cooked at the Michelin-starred Daniel in New York, Noma in Denmark and Wildebeest in Vancouver. In 2015, chef Downey launched a foraging company, which supplies West-Coast restaurants such as L’Abattoir, AnnaLena and Burdock & Co.
