MILAN — S. Pellegrino is launching the S. Pellegrino Young Chef 2016 challenge — a global scouting project to find the best young chef in the world.

“I was delighted and honoured to be named S. Pellegrino Young Chef 2015,” said last year’s winner, Mark Moriarty. “The journey was an unforgettable and one-off experience that I will never forget. I met so many fantastic chefs along the way and the title has made an incredible difference to my career as a whole.”

The competition will take place in four stages. Between Jan. 1 and March 31, young chefs across the globe can apply online with their signature dish. Throughout the month of April, ALMA, an international educational and training centre for Italian cuisine, will select 10 finalists from each region. At the regional finals, which will take place between May 1 and Aug. 15., the area finalists will be required to cook their signature dishes for a jury of independent top chefs. On Oct. 13, the finalists will gather in Milan for a two-day intense cooking competition in front of the international panel of judges to determine a champion.

Applicants must be no older than 30 and are required to have at least one year of experience working in a restaurant as chefs, sous chefs or chefs de partie.
