Thierry Opens in Vancouver

VANCOUVER — Top Table proprietor Jack Evrensel, and maître chocolatier and pâtissier Thierry Busset, are celebrating the opening of Thierry — a shop, café and atelier.

“This new venture realizes a longtime dream of mine,” said Busset of the new Vancouver chocolaterie pâtisserie. “We wanted something absolutely unique: the free-flowing shop and café, an atelier where you can watch us work.”

Busset honed his craft working in London and England, and previously led the pastry programs at Top Table’s sister restaurants: CinCin and West.

The café offers a variety of options from coffees, cappuccinos and croissants, to sandwiches, gazpacho, quiche and macaroons.

Thierry joins the Top Table family, which includes Araxi, Blue Water Cafe + Raw Bar, CinCin and West.
