SASKATOON — Dale MacKay, Top Chef Canada’s season-one winner, is preparing to open Ayden Kitchen & Bar this summer in Saskatoon, which was formerly occupied by Souleio Foods.
“We will be focusing on the great local meats, lots of fresh and cured sausage, duck confit and some great light and fresh salads, like tomato watermelon salad with vanilla-balsamic dressing. We will just be cooking from the heart and trying to make people happy — from the more formal wine events that we will be doing to a very simple house-made burger at lunch,” said Dale MacKay in an interview as quoted by CBC News.
MacKay recently closed two restaurants in Vancouver, due to high rent. He won Top Chef Canada’s first season with his finale dishes of black cod with barbecue pork consommé, roasted lamb and strawberries on lemon custard with garden-picked basil.
