TORONTO — Chef David Lee and Yannick Bigourdan, co-owners of Nota Bene and The Carbon Bar restaurants in Toronto, are preparing to part ways after a 15-year partnership.
Yannick Bigourdan and partner Franco Prevedello will carry on at The Carbon Bar. “Working with David has been a real pleasure; together we have built successful restaurant concepts,” said Bigourdan. “Franco and I are looking forward to focusing on The Carbon Bar and its existing food and cocktail program.”
“Our partnership has allowed us to grow and succeed and make our mark in Toronto,” said Lee. “I am humbled by our great following and loyal guests that have helped make Nota Bene a top dining destination, and I’m excited to take the NB experience to the next level.”
Lee will stay on at Nota Bene with plans to change the menu and renovate mid-year. The restaurant will continue to offer world-class hospitality and seasonal, globally influenced cuisine.
The trio will officially part ways Feb. 1.
