Toronto Chef Stephen Perrin Wins Big at the 2015 World Food Championships

TORONTO — Stephen Perrin, executive chef of Toronto’s Substance Food Group, took top honours at the BBQ Food Fight Night competition and second place in the Pasta category at the 2015 World Food Championships.

Perrin created a tortellini stuffed with Mangalitsa pork, black truffle, sage, and ricotta with foie gras and green pistachio truffle crema, Iberico ham crisp, grana-pistachio truffle frico and shaved fresh black truffle (pictured).

Perrin’s winning dish in the Food Fight Night was triple-seared USDA prime beef tenderloin with lobster, corn, bacon, jalapeño, and smoked cheddar stone ground grits, fennel chimichurri and red wine jus.

The Substance Food Group owns Terra in Thornhill, Ont., Sarpa in Richmond Hill, Ont., Rusty’s in Collingwood, Ont. and the recently opened Francobollo Posto Italiano in Toronto. Both winning dishes will be featured on the restaurants’ menus in 2016.
