VANCOUVER — The team at Market by Jean-Georges in Vancouver is morphing with news senior sous chef Montgomery Lau has been named chef de cuisine and David Auer, former GM at Le Gavroche, has been named the restaurant manager at the eatery that’s located inside the Shangri-La Hotel.
Lau joined Market’s opening team after completing his apprenticeship but was recruited to open The Westin Wall Centre at the Vancouver Airport. In 2012, he returned to Market as senior sous chef.
Auer worked at top restaurants in Austria and Switzerland before moving to Vancouver to work at the Divino Wine Bar as well as the Uva Wine Bar, Cibo Trattoria and Le Gavroche.
Market by Jean-Georges is three-star Michelin chef Jean-Georges Vongerichten’s first restaurant in Canada.
