Vij’s Release Second Cookbook

VANCOUVER — Culinary powerhouses Vikram Vij and Meeru Dhalwala want to make Indian cooking — often seen as time-consuming and complicated — easier for adventurous home cooks.

The celebrated restaurateurs, and owners of Vij’s and Rangoli restaurants in Vancouver, are following up their last award-winning cookbook with Vij’s at Home: Relax, Honey ($40), a tome that aims to simplify Indian cuisine for cooks with small kitchens and busy lives.

Ideal for first-time cooks or experienced chefs, the recipes include everything from vegetarian dishes that can be prepared in less than 45 minutes to seafood, poultry and meat dishes that can be prepared in 20.

“The book shows you can take simple sauces and masalas and make a great meal,” Vij told Postmedia News. “This is how we cook at home.”

The book, released by Douglas & McIntyre, is available in stores and online.
