Restaurant Buzz: The Salted Vine Kitchen + Bar

The latest collaboration between Jeff Park and Pat Allan, The Salted Vine Kitchen + Bar, has opened up in scenic downtown-Squamish. The menu features many shared plates and focuses on Pacific Northwest fare made with sustainable and seasonal ingredients. The new restaurant strives to present diners with an upscale and contemporary experience. Its impressive collection of wines is sourced from B.C. and around the world. Also available are local craft beers and housemade cocktails. The Salted Vine’s dinner menu includes dishes such as the pork belly with warm dashi broth, shiitake, pea greens and pickled shallots ($19); risotto with mixed mushrooms, perigord truffle, mascarpone and calamansi ($19); and Albacore tuna — seared rare with prosciutto, fennel, celery, apple purée and aji amarillo ($19). Side dishes include the house baked bread with herb butter and sea salt ($5); mixed olives marinated with spices ($7); assorted pickled vegetables ($6); and frites — garnished with parmesan and rosemary and drizzled in garlic aioli ($8). The dessert menu is short and sweet: cheesecake with mixed berry compote and raspberry coulis ($10); and Valrhona chocolate — chocolate mousse and passion fruit gel ($10).
