KLEINBURG, Ont. — Chef Gino Guercio has opened the 76-seat Belsito Trattoria-Vino in the Village of Kleinburg. The menu fuses tradition with innovative cooking techniques and combines authentic Mediterranean ingredients with premium local and imported products.
For more than two decades, Guercio has held progressive executive roles in the culinary divisions of luxury brands, including the Four Seasons Hotels and Resorts, Fairmont Hotels and Resorts, Delta Hotels and Resorts and InterContinental Hotels in Canada, Mexico and Japan. “I am very excited to see the result of many months of planning and can’t wait to welcome patrons to my new restaurant,” said Guercio. “The menu showcases recipes that my family has prepared for generations and a selection of my favourite Italian dishes.”
Menu highlights include salted cod with a warm tomato, caper and chive salsa, 8 oz. Alberta Black Angus filet mignon layered with rosti potatoes and grilled asparagus, served with barolo red wine jus and linguine frutti di mare “al cartoccio” wrapped in a savoury pizza dough and baked in the Neapolitan-style oven.
