Recipe by Ontario Pork
1 kg (2 lbs) Ontario pork loin, boneless, cut in 2.5 cm (1”) cubes
50 ml (1/4 cup) smooth peanut butter
15 ml (1 tbsp) brown sugar
2 green onions, finely chopped
50 ml (1/4 cup) dry sherry
Juice from 1/2 lemon
5 ml (1 tsp) each; coriander, cumin and salt
2 ml (1/2 tsp) ground black pepper
1 ml (1/4 tsp) cayenne pepper
1. Place the pork in a non-metal sealable container. Combine the remaining ingredients and mix well. Pour it over the pork and toss to coat well. Cover and marinate for two hours or overnight in the refrigerator.
2. If using bamboo skewers, pre-soak them in water for one hour. Thread the pork onto skewers with six millimetres (1/4 inch) of space between cubes.
3. Preheat barbecue on high and then reduce temperature to medium. Place the skewers on the grill and close the barbecue cover. Grill for ten to twelve minutes, turning often.
4. Serve over rice or in pita breads.
