Mott 32 — the exciting new restaurant in the Trump International Hotel and Tower Vancouver — has opened its doors. Despite earlier protests that have taken place at Trump towers around the world, Malcolm Wood, the managing director of Hong Kong’s Maximal Concepts, which owns Mott 32, is not concerned. “We have already seen great excitement and anticipation from the local community here for the opening of Mott 32 Vancouver,” says Wood. “We truly believe Mott 32 is going to elevate the already reputable fine-dining scene here in Vancouver by providing amazing dishes and a unique dining experience that guests have not seen in the city before.” Mott 32’s executive chef Lee Man Sing focuses exclusively on luxury Chinese food that will appeal to diners on a daily basis. “[Luxury Chinese food is] visually appealing but maybe not something you’d like to eat on a regular basis,” says Wood. “We decided if you can’t eat it twice in a day it shouldn’t go on the menu.” Lee Man Sing uses techniques from his Michelin-star background, such as sous-vide and dehydrator machines, to prepare ingredients, which include Iberico pork and Peking duck, sourced from a small supplier in the Fraser Valley. The restaurant’s interior was designed by Joyce Wang and takes diners through a fantastical tale of an immigrant’s journey with features such as family heirlooms, graffiti and propaganda script. Other decor features include antique chandeliers, hand-painted silk backdrops, mah-jong-style tables and a room filled with more than 1,000 calligraphy brushes.
