Now Open: CHARCUT in Calgary’s University District

CALGARY — CHARCUT, the brand’s second location in Calgary’s University District, has opened.

Located adjacent to the new Alt Hotel, CHARCUT University District’s 2,800-sq.-ft. space features an open kitchen with custom equipment, including a rotisserie grill and a smoker. Director views through 12-foot picture-glass windows reveals the chef’s salumeria, where co-chefs Connie DeSousa and John Jackson display their dry-aged beef, whole pigs and house-made salumi. Jack Coetzee is appointed the location’s executive chef and Ty Swihard is general manager.

“We’re delighted to welcome Connie and John from CHARCUT,” says Nadia Gravel, general manager, Alt Hotel Calgary University District. “Since 2010, when we first partnered at Le Germain Hotel Calgary, their culinary creations have been enjoyed by our guests, and we’re looking forward to continuing to create memorable experiences together.”

Additionally, the original CHARCUT, located adjacent to Hotel Le Germain in downtown Calgary, has unveiled its interior renovation with sleek and comfortable banquettes, wood-picket accents and modern bar with a dramatic display.

“With the opening of CHARCUT University District, our downtown location has undergone a re-fresh of its own,” says DeSousa. “While both locations share the same signature dishes and back to basics, back to flavour philosophy, each has its distinction that we invite you to experience.”
