Conant took a moment to introduce himself and his concept in a recent open letter to the city that was posted on The Huffington Post. And, although foodies are already bemoaning his so-called condescending chatter, many are still excited about the new branch of his popular Italian eatery that originally debuted in New York City.
It turns out Conant was asked to bring his brand north, to Toronto, somewhere he hadn’t visited much — until recently. “After a short time bouncing around Ontario, I’sve realized that the Niagara Peninsula has been about sourcing and presenting their local bounty for far longer than we have in America,” he writes. “The undercurrent of passion — from farmer, to purveyor, to my fellow cook, was amazing. Everyone whom I encountered had a love of food, and especially of their food — which I love.”
There was no talk about his menu, but with the opening slated for today, diners won’t have to wait long.
