Boulud Appoints Four Seasons Toronto Chef de Cuisine

TORONTO — Daniel Boulud has named Tyler Shedden chef de cuisine of Café Boulud, located within the new Four Seasons Hotel Toronto, both of which are expected to open in October.

“From the day he began working at Daniel, I appreciated Tyler’s technique, his energy and professionalism. He has the dedication it takes to maintain consistent quality in the kitchen and the palate to interpret the French-American cooking I’ve been doing at the original Café Boulud,” said Boulud.

Shedden is a Canadian West Coast native, having begun his culinary career as assistant cook at Val d’Isere in Whistler. He’s worked at C Restaurant in British Columbia, Anthony’s in England, Raincity Grill in Vancouver and Gordon Ramsay’s London NYC where he was promoted to executive sous chef. Most recently he was chef de cuisine at Boulud’s Daniel restaurant in NYC.

Shedden has been in Toronto since early summer researching local suppliers and training his team in preparation for the restaurant’s opening Oct. 6. The hotel opens Oct. 5.
