VALENCIA, Spain — Central in Lima, Peru has been named No. 1 in the World’s 50 Best Restaurants list for 2023. Sponsored by S.Pellegrino and Acqua Panna, the list includes restaurants from 24 territories in five continents and introduces 12 restaurants making their debut.
Central, the flagship restaurant of chefs Virgilio Martinez and Pía León, took over from the 2022 winner, Geranium in Copenhagen, which is now elevated to the Best of the Best hall of fame. Central is followed by Disfrutar in Barcelona and Diverxo in Madrid.
South America boasts nine restaurants overall including two new entries: Kjolle (No.28) in Lima, Peru and El Chato (No.33) in Bogotá, Colombia. Asia follows with seven restaurants on the list, including Singapore’s Odette, named The Best Restaurant in Asia (No.14), along with new entries Le Du (No.15) and Gaggan Anand (No.17) in Bangkok and Sézanne, Tokyo (No.37). Two Dubai restaurants make the list for the first time: Trèsind Studio (No.11), named The Best Restaurant in Middle East & Africa, and Orfali Bros Bistro (No.46).
The award winners include:

- The Beronia World’s Best Sommelier Award – Miguel Ángel Millán of Diverxo, Madrid
- The Flor de Caña Sustainable Restaurant Award – Fyn, Cape Town, South Africa
- The Highest New Entry Award (sponsored by Aspire Lifestyles) – Table by Bruno Verjus, Paris (No. 10)
- The Villa Massa Highest Climber Award – Atomix, New York (No. 8)
- The Gin Mare Act of Hospitality Award – Alchemist (No. 5)
- The Estrella Damm Chef’s Choice Award – Julien Royer of Odette, Singapore
