VANCOUVER — Chef Neil Taylor, who specializes in authentic Italian cuisine at Cibo Trattoria, Vancouver, is presenting a regional dinner July 25.
Taylor’s menu showcases the foods of Liguria, a region in Italy tucked between mountains and sea at the French and Tuscan border.
Historically the region’s cuisine fuses French, Arab and southern-Italian influences. Taylor’s menu highlights those flavour profiles and features fresh produce, seafood, wild and cultivated greens and fresh herbs.
The five-course menu ($48), which will be served at the Cibo Trattoria inside the Moda Hotel, Vancouver, will feature dishes such as pissaladière-focaccia with onions, olives and anchovy; fritto misto-halibut, artichokes, squid, anchovy, sage and lemon; fazzoletti with pesto, green beans, potatoes, pecorino; and rabbit braised with taggiasca olives, pine nuts and rosemary.
Next month’s regional dinner will feature the flavours of Campania, Italy.
