Foraging Takes Centre-Stage At New Vancouver Restaurant

VANCOUVER — Vancouver’s Listel Hotel has announced plans to open Forage, a new hotel-restaurant, which replaces O’Doul’s, a 40-year-old institution that closed this summer to make room for a new concept.

Chris Whittaker, Forage’s executive chef, forages year-round and is dedicated to finding menu ingredients that maintain traditional flavours while promoting the value of regional foods.

“The forage menu is exciting, mixing traditional preparation methods with innovative styling,” reads a release about the menu at Forage, which is expected to open at 1300 Robson Street in November for breakfast, weekend brunch and dinner.

The restaurant is part of The Next Course project, a collaboration between Listel Canada, BC Hydro, LiveSmart BC, the Green Table Network and other industry manufacturers. It aims to structure the renovation with energy-efficient and low-impact technologies.
