STIRLING, Ont. — Everyone’s heard of cow’s milk, soy milk and rice milk, but Martin Littkemann and Lori Smith have been churning out something new at their Stirling, Ont. farm.

In a recent Toronto Star report, the duo talk about their new foray into the water buffalo dairy production business, which began after they grew tired of milking cows and decided to find out more about buffalo at the World Buffalo Congress in Italy in 2007.

Today their herd of 101 produces up to 1,700 litres of creamy, silky pure white milk, which they also convert to cheese. Both have big goals. “We’sre not trying to start a niche market,” Littkemann tells the Star’s Jennifer Bain. “We’sre trying to start an industry.”
