Now Open: Chartier

BEAUMONT, Alta. — Just a little more than a year after launching their Kickstarter campaign, Darren and Sylvia Cheverie have opened the doors of Chartier in Beaumont, Alta.

Chartier is the first successful restaurant Kickstarter campaign in Alberta, and the most successful restaurant Kickstarter in Canada to date.

The space features a rustic aesthetic complete with mismatched chairs and vintage dinnerware. The dining room walls are lined with reclaimed barn board salvaged from local farms.

The French-Canadian restaurant serves up lunch and dinner Tuesday through Sunday, as well as weekend brunch. In the kitchen, chef Steven Brochu and his team create dishes such as “Tomarrow Soup”, a creamy tomato soup with roasted bone marrow, confit garlic, and grilled brioche ($9); tourtière made with bison, pork, and confit duck, served with Brussels sprouts and house-made rhubarb relish ($24); duck and waffles with berry preserve and thickened maple syrup ($17) and the “Pear Dream” featuring maple and red wine-poached pear with yogurt snow, colourful meringue and caramelized white chocolate ganache ($8).
