Byblos, Eastern Mediterranean Restaurant, to Open in Toronto

TORONTO — Icon Legacy Hospitality and Ink Entertainment plan to introduce Toronto diners to the flavours of the Eastern Mediterranean with the opening of Byblos restaurant.

“It’s about the overall experience and the ability to take our guests on a journey,” said Charles Khabouth, CEO, Ink Entertainment, based in Toronto. “Byblos will stimulate and heighten the senses with every aspect of the concept; from the freshly foreign menu selections, to the cocktails and the musical programming.”

Stuart Cameron (Weslodge and Patria), executive chef, designed Byblos’ extensive menu to merge traditional, modern and local ingredients and methods to create a unique culinary experience. This approach is not limited to the cuisine, but extends to the design, wares and the family-style serving style.

Meanwhile, Wes Galloway, house alchemist, has crafted a selection of Mediterranean and Middle East- inspired cocktails made with tonics, bitters and house-made garnishes.

Opening March 17, the restaurant will span two floors of the iconic Storys building, located in the heart of Toronto’s entertainment district.
