Charcoal Group Announces Extensive Renovations at Solé Restaurant & Wine Bar

WATERLOO, Ont. — The Charcoal Group’s recently acquired property, Solé Restaurant & Wine Bar, is about to get a facelift. Scheduled to commence on April 15, the community staple will undergo comprehensive renovations, aiming to re-define its ambiance and enhance customer experience. The closure is anticipated to last until May 2, coinciding with a re-opening just in time for Mother’s Day and the bustling patio season.

Led by CEO Jody Palubiski, The Charcoal Group is committed to investing in the evolution of Solé. The refurbishment encompasses a wide spectrum of upgrades, spanning from furniture and lighting to washrooms, décor and branding.

“The insights gained on the flow of service during this transition over the past two months have informed our vision for Solé’s future and the direction we’d like to go,” says Palubiski. “This renovation reflects our dedication to creating memorable dining experiences while staying attuned to evolving guest preferences.”

The group’s investment in Solé’s renovation is expected to total close to $1 million, embodying its commitment to culinary excellence and guest satisfaction. The renovation will also place an emphasis on the terrace which though the years has become a favourite local hotspot.

Despite the transition, The Charcoal Group is proud to retain 100 per cent of Solé’s employees. Palubiski commends the team’s resilience, stating, “The team has been exceptional throughout a tremendous amount of change over the last couple of months with such a great ‘can do’ winning mindset.”

The Charcoal Group’s commitment to innovation and excellence in hospitality is underscored by recent renovations at their Beertown properties in Cambridge and Waterloo, Ont., as well as The Bauer Kitchen. Palubiski emphasizes the importance of continuously refreshing the restaurants to maintain relevance and exceed guest expectations.
