David Hawksworth’s New Restaurant, Nightingale, to Open in Spring

VANCOUVER — David Hawksworth’s newest culinary endeavour, Nightingale, will open this spring at 1017 West Hastings St. in Vancouver with a menu highlighting unpretentious dishes and local ingredients.

“We’ve been having a lot of fun planning the menus at Nightingale,” says Hawksworth. “Our modern Canadian cuisine delivers options catered to the way that people want to eat today. There are choices of share plates, house-made pastas, creative wood-fired pizzas, salad and seasonal vegetable dishes; as well as accompaniments such as charcuterie and crudo.”

The 7,400-sq.-ft. rustic-chic interior was designed by Alessandro Munge of Studio Munge, featuring exposed copper pipes and remodelled library furniture to complement the autumnal colour palette of hunter green, faded rust and muted oxblood.

The beverage program includes classic cocktails with a twist and gin and tonic on tap. Local craft brews, a diverse spirit list and ‘approachable’ wine program round out the offerings.

Nightingale is part of the Hawksworth Restaurant Group, which includes Hawksworth Restaurant, Bel Café and Hawksworth Catering.
