VANCOUVER — Carlino, a new full-service restaurant from Kitchen Table Restaurants is set to open on Dec. 1, 2021 in Shangri-La Vancouver, under the helm of chef Mark Perrier.

Inspired by the Friuli region of Italy, Carlino’s menu pays homage to B.C. and the similarities it shares with northern Italy. In addition to its à-la-carte menu, chef Perrier also includes a fai tu (you pick) menu, allowing him to select a diner’s meal.

“We’re providing diners with a novel approach to northern-Italian cuisine,” says chef Perrier. “One that’s a culinary adventure offering lesser-known dishes as well as familiar favourites. Local ingredients are sourced from small producers and farmers in the area, such as our eggs from the 100 Black Copper Maran hens and the lamb we raise ourselves at our group’s family farm in Abbotsford, B.C.”

Bar manager Gianluigi Bosco designed Carlino’s list of signature cocktails and wine director David Steele curated its wine program.
