VANCOUVER — COFU Pressed Sushi, a new plant-based sushi and sober bar, opened Jan. 8, 2022 in Vancouver.
Co-owned by Soramaru Takayama and Akiko Otsuka, COFU Pressed Sushi previously operated as a take-out restaurant in the fall 2021, but has since shifted entirely to offer a plant-based menu and non-alcoholic beverages.
COFU Pressed Sushi is one of few plant-based sushi and sober bars in Canada.
