Dog & Tiger Announces New Executive Chef

TORONTO — Toronto restaurant, Dog & Tiger Public House has named Ryan Michailoff as its new executive chef.

Michailoff was most recently chef de cuisine at the Broadview Hotel in Toronto and boasts more than 20 years of culinary experience.

In his new role, Michailoff’s first duty was to reimagine Dog & Tiger’s menu. New menu items include shareable appetizers, such as the Brasserie-Style Steak Tartare with hand-cut filet mignon and sous-vide egg yolk ($15) and Beef Cheek and Lamb Neck Croquette with cauliflower purée and sour-cherry reduction ($15).

The mains portion of the menu includes the Crispy Duck Leg Confit on a bed of smoked white-bean cassoulet ($28) and 24-Hour Lamb Shank with butter-braised fall vegetables, sourdough pain de mie and jus ($27).

“We have a menu now that fits the space; whether you’re coming to watch a game, bringing your partner for a romantic night out or just looking for a great meal with your kids. You can certainly taste the passion, commitment, dedication and love for what we’re doing in the food,” says Michailoff.
