Recipe: Grilled Mango Lime Shrimp Skewers

453 g (1 lb) large shrimp; shelled and deveined
125 ml (1/2 cup) mango fruit purée
75 ml (1/3 cup) lime juice, freshly squeezed
125 ml (1/2 cup) onion, finely chopped
2 cloves garlic, minced 10 ml
(2 tsp) ground coriander
5 ml (1 tsp) salt
1 large onion; cut into 2 cm (3/4”) squares
1.5 bell peppers; cut into 2 cm (3/4”) squares

Directions: In a large zip-lock bag, combine mango fruit purée, lime juice, onions, garlic, coriander and salt. Add the shrimp and toss to coat. Allow to marinate for at least one hour prior to grilling. Soak your skewers if you are using wood. Remove the shrimp from the marinade and thread them alternately onto skewers with peppers and onion chunks. Grill for about two minutes on each side or until the shrimp is pink and just cooked through.
