Industry Leaders Speak at Guelph Symposium

GUELPH, Ont. — The University of Guelph Sustainable Restaurant project (UGSRP) hosted its 9th-annual sustainability symposium on Oct. 2, hosting more than 100 students and industry professionals. 

Keynote speakers included Ocean Wise’s Erika Bollinger, who spoke about new and innovative solutions to better the seafood industry;Diversity Food’s COO Ian Vickers discussed its multi-bottom approach that is single-use plastic free; executive chef John Morris and general manager Cameron Dryburgh of the CN Tower’s 360 Restaurant; and Grant Sparling, Chief Development Officer Cowbell Brewing Co. 

The event aims to spread awareness of the challenges faced as well as celebrate sustainability success stories in the Canadian foodservice industry.
