Savour Stratford Festival Entertains

STRATFORD, Ont. — This past weekend, foodies, chefs, entrepreneurs and local artisan food producers converged in Stratford, Ont., for the fourth annual Savour Stratford Perth County Culinary Festival.

Event highlights included a spirited presentation by Jonathon Gushue, executive chef of the Cambridge, Ont.-based Langdon Hall. Speaking about the virtues of ‘forgotten ingredients,’ the toque treated attendees to delicious tartlets made with locally foraged ingredients.

Attendees also followed their nose to Jennifer McLagan who presented her ideas on ‘nose-to-tail’ cooking, with innards gently sizzling in a pan to her left. Armed with a pig’s head, severed down the centre, McLagan demonstrated how to remove the brain, warning her audience “If you’re squeamish, look away.” The Odd Bits author’s talk delivered on the promise of how to cook the whole animal.

Meanwhile, Boss Hogs’ barbecue boys served up ribs in the square, and a comical street busker, known as The Fire Guy, entertained the crowds.
