CALGARY — CHIX Eggshop has opened in Calgary, attached to the Alt Hotel Calgary East Village, which opened earlier this year.
The restaurant is the latest venture from Connie DeSousa and John Jackson, who own and operate CHARCUT Roast House, charbar, Rooftop Bar @ Simmons and Alley Burger. The kitchen is led by executive chef Jessica Stone.
The “fast-fine-diner” concept is counter-service only and offers breakfast and lunch fare, along with a selection of beer, wine and craft cocktails. The menu features breakfast and lunch classics — with some unique flavour twists — made with locally sourced ingredients, including the Hot CHIX Crispy Nashville sandwich with hot chicken, cage-free over-medium egg, buttermilk-mayo-and-celery slaw; and Inspired Greens with living butter lettuce, toasted seeds, sprouts, vegan feta cheese, cucumber, hummus and lemon dressing.
Designed by Connie Young Interiors, the space features bright, retro design elements with a chic twist, including a pastel colour palate. The decor also features old photos of the three chefs’ mothers, who appear on the restaurant’s wallpaper. The self-serve seating includes a mix of booths and banquettes, as well as a few counter seats along the bar and additional seating in an indoor patio located in the Alt Hotel lobby.
