TORONTO — Amid the COVID-19 backdrop, Hemant Bhagwani has opened his latest new concept in Toronto. Egg Bird is now open at 1595 Bayview Ave.

The chef-driven, gourmet-food concept is the chef’s newest addition to the Bayview strip, specializing in burgers, fried chicken, Belgian frites, frozen custard and shakes. Having opened five restaurants on Bayview Avenue throughout his career as a restaurateur, some have dubbed Bhagwani “The King of Bayview.” 

Egg Bird merges Bhagwani’s love of burgers and eggs with his vision to re-create the traditional, neighbourhood brunch spot. All of Egg Bird’s beef burgers are made with 100-per-cent brisket from nearby Cumbrae’s and topped with a cage-free egg; fries are hand-cut and thrice-fried for ultimate crispiness; shakes come in a variety of combinations, such as Blackberry Cheesecake to Vanilla-Coconut; and, on those hot summer days, Egg Bird’s frozen custard in vanilla or chocolate is sure to hit the spot. 

Bhagwani has recruited Kevin Diaz, a former chef at Popa, to run daily operations. Diaz’s fried-chicken brand, Chubb’s, will be dishing up the fried-chicken offerings as Bhagwani wants to use his 20-plus year career as a serial entrepreneur and restaurateur to help young chefs get their start. 

Fried chicken will come from all corners of the world — from Japan to Mumbai. “Fried chicken is one of those foods that everyone loves and every culture has their own take on it. We have an ambitious goal of having the best fried chicken in Toronto,” says Diaz. 

To celebrate its grand opening, Egg Bird will be offering buy one get one free on all chicken sandwiches until July 12. Egg Bird’s menu will be available for take-out or delivery through UberEats and the restaurant will operate from 10 a.m. to 9 p.m. seven days a week.
