VANCOUVER — Ocean Wise executive chef Ned Bell has released his first cookbook — Lure – Sustainable Seafood Recipes from the West Coast — co-authored by food writer Valerie Howes.
The cookbook boasts 80 recipes, featuring 40 varieties of sustainable seafood, designed for home cooks. Lure is broken down into four categories: white fish, fatty fish, shellfish and sea greens. Recipes cover a variety of dishes, from chowders to kelp brownies.
Bell has long been an advocate for sustainable seafood. In 2014, he founded Chefs for Oceans, which he launched with an 8,700km bike ride across Canada. This year, Bell was awarded the SeaWeb Seafood Champion for Advocacy Award for his leadership, innovation, vision and activism.
