Restaurant Initiative Shines Spotlight On Pork

CALGARY — Alberta pork is being championed at participating restaurants across Western Canada as part of Passion For Pork, a new initiative designed to ignite the country’s excitement for local pork.

“We started the program in the spring as an educational initiative. People want to know more about pork — what they can do with it, how they can cook it and where they can buy it,” Darcy Fitzgerald, executive director at Alberta Pork, the organization behind the initiative, told the Calgary Herald.

Starting Aug.27 and running until Oct. 21, Passion for Pork Restaurant Week is sweeping through Western Canada provinces. It began in Whistler, B.C., and is expected to hit Vancouver, Edmonton and Calgary. During Restaurant Week, chefs are serving a variety of innovative pork-themed dishes.
